I must say I was put off by the consistency, thinner than mashed potatoes. But they were good, very good, a nuttier flavor than potatoes. Don't know if I'm gonna cook the second one the same way but if I do ill cook them a little less and drain them better.

We had 2. One got moldy in the fridge. Sorry, we're just too white to incorporate a new root veg like that into our lives.
