I would assume it's because people can't put in new offers, but I'm not entirely sure. I'll be looking into that.

Sure, if you're quick. These are flash-crashes. The upswings are also quite violent.

I played with bitfinex and it worked fine, I made 0.22BTC just playing around with 2.5BTC. The neatest feature is the fact that it's a meta-exchange - you can arb all day and at a good pace since it automatically routes your orders to one of a handful of exchanges that they're funded at.
