I kinda like shredded coconut with whatever they do to it to make those chocolate bars. Add sugar I guess.

I found a super easy way to do that, drain it, half it, put it in the freezer, then take a knife or spoon and get between the skin and the fruit and pop it out! sometimes you have to use a peeler or paring knife, but it's fairly easy this way. They used to sell coconuts at the store in chunks, already pealed and stuff, they don't do that anymore. :sad:
