So, I'm going to be doing some form of paragliding/sailing in Cabo in a few weeks. I want to record it. So what do you guys do-put one of those cameras on your head-a "go pro?" is that what they are called? How much do those run? I likely won't use it too often. Are there cheaper alternatives?

I have an older Contour ROAM 2 camera that I mount to my motorcycle helmet. Paid around a hunnerd bucks for it used. I don't recommend it, the one linked above is superior and cheaper.

How would that one you linked work? It looks like people bough a bunch of extra stuff with it. I just want something to strap around my head or whatever. I could use my iPhone but that is probably not recommended. ?

I could read more about that right now, but my senses have been Ativan dulled at the moment and nothing is very clear. Dumb it down for me Matty. Can I just wrap this thing around my head? Because I can't wrap my head around it at the moment.
 
The second link in my post is a kit that includes a headband type of mount.

I might buy that camera and stick it on the back my motorcycle. Reviews are good.

You might be able to just rent one there. The company you use for paragliding might have them for you to rent. Not uncommon anyway.

Last time it was just a solo guy on the beach outside the resort. It was a motorized parasailing deal. He did not offer any equipment, but I am sure I could find a scheduled deal with a company who may. That would be the better option if available probably. Who knows though, I might find something else to use it for.
